
YUMMILICIOUS
While most Dutch baby versions are mainly egg with a bit of flour, I found that that wasn't satisfying me, or my gang of 6, enough. For this version, I use a bit more flours to make it a dense belly-filling meal that will keep you from getting that empty feeling before lunch. You can see my other recipes here.
- blueberry with cinnamon
- banana and walnut with spices
- cinnamon raisin
- chocolate chip
- dried cranberries with orange zest

EGGS
Ever wondered how to tell if you eggs are fresh? Here's how:Place the egg in a bowl of water. If it rests at the bottom, it is quite fresh. If the egg stands upright on the bottom, it's fine but needs to be eaten soon or hard-boiled. However, if the egg floats, it's not any good. Additionally, when the eggs is cracked into a bowl, the yolk should sit up on the jelly whites. The whites should not be runny.

Grain-Free Dutch Baby ~ An Oven Pancake

Want to nourish your family and please their taste buds too? This healthy grain-free Dutch baby is sure to please. The best part is you can adapt to most any diet.
- 1 dozen large eggs
- 1 cup whole milk
- 1 cup buckwheat flour
- 1 cup garbanzo bean flour
- 1/2 cup tapioca flour
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla (optional)
- Preheat oven to 400 degrees. In a large mixing bowl, whisk your eggs until well-blended.
- Add your milk to the egg mixture and whisk. Also add vanilla at this time if you choose to use it.
- Add your dry ingredients (including any spices you may like) and whisk until well-blended.
- If you want to add any berries or nuts, do so now.
- Butter a 9" x 13" baking dish and pour your Dutch baby mixture in. Bake for 45 minutes until risen and lightly browned or until toothpick inserted comes out clean.
- Let cool enough to make it easy to serve. Top with fresh fruit and honey or maple syrup. Enjoy! if there happen to be any leftovers (never at our house!), store them in the refrigerator for up to one week.
