Chocolate. Why is that word one that typically brings a smile to everyone's face? Because it is DELICIOUS!!! I am not what you would call a chocoholic, but I do love incorporate some in my diet...daily. haha. I'm not talking about the kind that looks like chocolate but tastes like plastic. I mean the real deal dark goodness that comes from cocoa beans. Have you ever read
the story of how it came to be? We've studied it in our homeschool studies. So intriguing! Let me share with you this recipe for tantalizing flourless chocolate fudge cookie. mmm...

If you've read any of my past recipes, you know my family and I try to stick to a diet that encourages a healthy gut. You can read more on why and
get more recipes HERE. With that we typically eliminate grains from our diet, unless they are processed properly (soaking and sprouting). However, we still have pizza night every Friday where we do make our own crusts from wheat, or sunflower seeds, or cauliflower, or egg...just depends.
SO GOOD
One of the things aside from building and creating, decorating, etc. is that I am a foodie. I love to cook and bake and create my own recipes. My family and I needed a change-up just for fun in what we prepared, so I decided to try a new cookie. Many of you saw me share these on social media and begged for the details. So... here is what I came up without using flour. ta-da!

They are lightly crisp on the outside and full of fudgy goodness on the inside. A chocolate lovers dream of a chocolate cookie filled with chocolate chips. Hence, I named them flourless chocolate fudge cookie. Sounds good, right? They are similar to my peanut butter cookie recipe found in the
bottom of this post. You have to check those out too - only 3 ingredients!
This recipe is just as easy. Whip up your ingredients as the recipe states and in less than 15 minutes you are done and baking takes less than 12 minutes. Can't get much easier than that. You'll see that I use natural ingredients with no artificial anything to keep them as healthy as can be. To make this dairy-free just be sure to source chocolate chips that are deemed so. For peanut allergies, just substitute for another nut butter.
INGREDIENTS
You can source your ingredients for this flourless chocolate fudge cookie recipe from a local health food store, but also can get them via the links below:
- vanilla
- semi-sweet chocolate chips
- peanut butter
- sea salt
- baking soda
- eggs - straight from the chicken is best, as in farm (go visit one! :) )
- sucunat
- cocoa
The batter may not look like much at first, but trust me, the flavor and texture is there just waiting to burst out. Feel free to reduce the sugar or chocolate chips as I like to think along the lines of less is more.

These little gems really spread out and puff, so you want to be sure to give them about 1 ½ between them on a cookie sheet.
Flourless Chocolate Fudge Cookie
- 1 cup peanut butter (or any nut butter)
- 2 large large eggs
- 1 teaspoon vanilla
- 1 cup sucanat or rapadura cane sugar (can be slightly reduced if you desire)
- 1/4 cup cocoa
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 3/4 cup semi-sweet chocolate chips
- Preheat your oven to 350 degrees.
- In a large mixing bowl, add your eggs and lightly whisk until blended. Stir in peanut butter and vanilla until blended.
- Add sugar, cocoa, baking soda, and salt. Combine until well blended, making sure to scrape sides and bottom. Fold in chocolate chips.
- Drop onto prepared baking sheet in tablespoon-sized portions. about 1.5 inches apart.
- Bake for 10-12 minutes or until cookies have doubled in size and slightly risen. They will look a light brown and begin to crack. (see photos).
- Remove from oven and let cool on baking sheet placed on wire cooling rack for about 3-5 minutes.
- Remove from cookie sheet and let continue to cool on wire cooling rack. When cooled store in an air-tight container. I bet you won't need one as they won't last long! Enjoy!

Once they are cooled, watch out. They won't last long! What a perfect gift they would make and even just to have as a sweet treat for no reason whatsoever. Those are the best kinds of pleasures - the unexpected hug kinda feeling.
